Behold, my beloved new food processor!
Boy have I been wanting one of these for years! I'm so excited! It even comes with a blender and juicer (in which you can apparently just dump an entire apple and it does the work for you...still need to test that out.) And look at all the nifty attachments! I can seriously hardly contain myself ;-)
Obviously, the very first thing I did was whip up a batch of salsa. It took me literally no more than 5 minutes!
To go with my salsa, I fried up some taquitos. So easy and delish!
This was one of those, I'll throw in a little bit of this and that moments, so I don't have exact measurements to write a recipe, but here's what I did. I sauted some finely chopped onion and green bell pepper in olive oil, then added some vegetarian "beef"-like crumbles and chopped tomato. I seasoned the mixture with lime juice, garlic powder, ground coriander, oregano, cumin, smoked paprika and chipotle chili powder (alternatively, you could just use a taco seasoning mix).
Then I heated up a pan of vegetable oil and quickly fried some corn tortillas just enough to soften them. I stuffed them with some of the filling and a blend of grated Cheddar and Gouda cheeses, rolled them tightly and secured with toothpicks. Finally, I fried them until golden brown and dipped them in the fresh salsa! Yum!




I got a food processor this Christmas too and I'm wondering how on EARTH I ever lived without it! All that time chopping stuff, ugh! Yours is like a mega machine though, wow!

ReplyDeleteAs for the salsa and taquitos ... don't you just love a good 'kitchen goddess moment' ... when the passion for cooking takes over and a recipe just comes to you? Your Tex Mex looks amazing!
I've been wondering the same thing! How on Earth did I live without it, lol. I'm in love! I can't wait to make hummus tomorrow! Oh, and I grated the cheese for this recipe with the grater attachment. Hello, easy! When and if I ever get my oven back, I'm going to make Breigh's low-carb cauliflower pizza crust!
ReplyDelete@Sonya: It was on sale at MediaMarkt one weekend. You know what was crazy though? Phillips had a 30 day trial period and the first one we bought had a used motor in the box! Apparently when someone returns one, they just re-sell it. They didn't even bother to clean it! Ridiculous!
@Susan: This tool is sooo right, for just about everything! I'm sure I'll probably still whip cream and doughs in my kitchen aid, but my knives are about to get real lonely ;-) And thank you, you're quite the kitchen goddess yourself!
